The flamboyant colors, the days that become shorter and the dry leaves that crunch under our feet: these are the symbols of fall for many of you. But for me, Rohanna, American member of the Tajinebanane team, there is something missing from the list: pumpkin pie.

The following recipe has been tested and approved by the whole team, kids included! And as we know that in these times (= the rain and the cold), it is important to be creative to find activities to do at home. This recipe is both useful and enjoyable: occupy the kids in the kitchen and have fun 🤤
🥧 This recipe is the only one I use for my homemade pumpkin pie and it is amazing every time! It's the perfect combination of pumpkin and fall spices. It can be eaten warm or cold, but it is best when eaten warm with a scoop of vanilla ice cream, while watching holiday movies on repeat.
I started using this recipe a year ago when I spent my first Thanksgiving with French people. I wanted to share a part of my culture, but also have something that reminded me of home and my family. This recipe is easy to follow and it is a great activity to do with your kids, friends and family. 🧡
Rohanna's Pumpkin Pie Recipe

The ingredients 🧈
For The Crust
• 2 cups all purpose flour
• 1 tablespoon sugar
• 1 teaspoon salt
• 1 cup cold unsalted butter
For the Pumpkin Pie Filling
• 15 oz roasted pumpkin puree (or a 15 oz can)
• 1 1/4 cups sweetened condensed milk
• 2 eggs, 1egg yolk
• 1 1/2 teaspoons cinnamon
• 1/4 teaspoons ground nutmeg
• 1 teaspoon ground ginger
• 2 teaspoons vanilla extract
• 1/2 teaspoon salt

STEP #1 :The Pumpkin Puree
Preheat the oven to 400°F.
✔︎ Start by cutting the top and bottom of the pumpkin.
✔︎ Then cut the pumpkin in half (and in smaller pieces depending on the size) and remove all of the seeds.
✔︎ Rub the oil of your choice all over your cut pieces of pumpkin & place them in a foil lined rimmed baking sheet.
✔︎ Roast the pumpkin for about 40 minutes or until the pumpkins are soft!
✔︎ Peel or scrape off the pumpkin skins. This shouldn’t be too difficult after they have been in the oven.
✔︎ Process the pumpkin in a food processor/ blender until the puree is completely smooth.
🔔Pumpkins are naturally very watery so you will need to drain the excess pumpkin water using a cheesecloth lining in a sieve (or a thin dishtowel you don’t mind getting dirty). Place the pumpkin puree in the cheesecloth lining and let it drip for a few minutes or until most of the water has been drained.
Pro tip ♥️ Save your pumpkin seeds, they are the perfect snack!
Wash and dry the pumpkin seeds. Season the seeds with olive oil, salt, garlic powder & back pepper. Evenly spread the seeds on a lightly greased cookie sheet & roast them at 350°F for about 12 - 15 mins, making sure to toss them every 5 mins. Once the seeds are the perfect golden color, they are ready to be taken out of the oven.
STEP #2 - The Pie Filling
Heat the oven to 325°F.
✔︎ Mix together the pumping puree, spices & condensed milk in a bowl.
✔︎ Take your store bought or homemade pie crust & place it in a 9 inch pie pan. Using a fork, pierce the pie crust all over the bottom.
✔︎ Pour the pie filling into the pie pan & bake for 1hr - 1hr 10 mins (or until the filling has completely set)
✔︎Let the pumpkin pie cool & serve with whipped cream.
